In Budapest, the expectations surrounding pizza have traditionally leaned towards the familiar flavors of tomato and mozzarella. However, a recent development at Neverland Pizzeria is challenging these norms with a unique offering that draws inspiration from ancient Roman recipes.
A Decisive Shift
Neverland Pizzeria has introduced a pizza that excludes typical ingredients like tomatoes and mozzarella, instead featuring a base made from ancient grains such as einkorn and spelt. This innovative dish is topped with ingredients like epityrum, garum, confit duck leg, toasted pine nuts, and ricotta. The pizza was inspired by a fresco unearthed in Pompeii in 2023, marking a significant shift in the culinary landscape.
The Role of Technology
In tandem with this culinary innovation, Coco Robotics has deployed around 1,000 delivery robots in Budapest, capable of carrying up to eight extra-large pizzas or four grocery bags. These robots have made more than half a million deliveries, covering millions of miles in various weather conditions. Zach Rash from Coco Robotics emphasizes the importance of reliability, stating, “The best way we can do our job is by arriving exactly when we told you we were going to arrive.”

Josep Zara, the chef behind the pizza, noted, “We had to exclude all ingredients that originated from America,” highlighting the commitment to authenticity. However, Gergely Bárdossy, a local food expert, pointed out that “most people want more conventional pizza, so it’s not for everyday eating.” This reflects a contrast between traditional expectations and innovative culinary explorations.
